Breakfast Inspiration: Matcha & Lemon Breakfast Bowl (Vegan, Raw, Gluten-Free)
Matcha, a powdered form of green tea, has long been recognized for its restorative and nutritional properties. It is extremely high in antioxidants, increases concentration, boosts energy and memory and naturally enhances mood.

Yield: 1 serving
1 large banana, chilled overnight and cut in pieces
Juice of ½ lemon
1 teaspoon lemon zest
1 teaspoon matcha powder, plus additional for garnish
1 tablespoon raw honey or several drops liquid stevia, to taste ½ ripe avocado
Toasted coconut flakes
Add the ingredients to a blender and blend on high speed until smooth. If the mixture is sticking to the sides of the blender, add a splash of water, and, while the motor is off, scrape down the sides of the blender a couple of times. Pour the mixture into a bowl, sprinkle with a bit of matcha, add the toppings and dig in.
